An autumn dessert recipe by the chef Syu Poropat

The Slovenian chef, Syu Poropat, a great cook and dessert specialist, accepted BIG BERRY invitation to write a recipe that is perfect for sipping in the autumn called: Autumn Dreams. 

If you follow BIG BERRY on social media channels, you might have already seen Syu around in one of the first editions of BIG BERRY Chef! We loved hosting Syu in BIG BERRY and tasting her amazing food creations.

Well, let’s go to what matters: the recipe - step by step!

Autumn Dreams recipe*

White chocolate mousse

   • 200g white chocolate
   • 5g gelatine
   • 200g mascarpone
   • 200g whipped cream

Soak the gelatine in cold water and then melt it.  Melt the chocolate in a separate bowl. Mix together the chocolate, mascarpone and melted gelatine. Add whipped cream and mix gently. Put in silicon moulds and freeze. Before serving, remove from moulds and wait till defrosted.

Dark Choc Ganache

   • 100g cream
   • 100g dark chocolate 61%

Boil the cream and put it over the chocolate. Mix well to get a smooth ganache and put in a piping bag once cold.

Chantilly
   • 50g whipped cream
   • 5g vanilla

Mix together whipped cream and vanilla. Put in a piping bag.

Cinnamon Crumble
   • 80g flour
   • 10g cinnamon
   • 40g sugar
   • 40g butter

Mix all the ingredients together to get crumble dough. Bake it at 180 degrees for 10 minutes. Use it when cold.

Orange Ice Cream
   • 250 g vanilla ice cream
   • 1pc orange juice
   • 1pc orange zest

Mix together vanilla ice cream, orange juice and zest.

Decoration
   • Fresh mint or Melisa flowers
