In 1998, the Simonič family decided to contribute to the wine variety of Bela Krajina region and started producing sparkling wine. Only two years after, their wines became available in most of the big supermarket chains and their own wine cellar. The grapes, "modra frankinja" – the most popular grape variety in this region, have to be picked in early September. At Simonič family wine cellars, the sparkling wine is filled in bottles and stored horizontally for at least a year and a half. Just as still wines, sparkling wines are better when aged.
