6th BB CHEF - Rihard Zupančič, fresh caught trout and a weekend by the Kolpa

Slovenian traditional polenta and fish taste much better when cooked in nature and in a cheerful environment and this was exactly what happened during the 6th edition of BIG BERRY Chef, 5th of June 2017, when BIG BERRY hosted Rihard Zupančič’s from Izletniška Kmetija Zupančič, Bela krajina, Slovenia. 


About Rihard Zupančič and his tourist farm

Rihard Zupančič, the 6th BIG BERRY Chef and cook in Izletniška kmetija Zupančič said that his aim as professional is always “to keep up with the quality, not to complicate too much and make people happy” by cooking for them. 

He started cooking when he was living alone in Ljubljana, once his mother wasn't around, but nowadays this is something that was turned into his passion, as it is visible while he is cooking.

Today his family’s tourist farm - Izletniška Kmetija Zupančič, also one of the local BB partners and suppliers, invites its visitors to enjoy the beautiful and magnificent nature of Bela Krajina region. There you can see the black cave salamander (Proteus anguinus) and taste some homemade food, juice and wine, especially lamb and grilled trout. They also produce natural apple juice Lamut, which is part of BIG BERRY breakfast basket.


The best trout recipe

For his special dish, that pleased everybody, Rihard chose fresh trout from their farm to be cooked on barbecue plate and the partner’s ingredient used in the dish was Zlati Ghee.

Why trout?  

Trout itself is a moist fish with amazing flavor.  It is categorized as an oily fish, which have many healthy benefits, including omega-3. Cooking the fish with butter (Zlati Ghee) and olive oil not only adds flavor but helps keep the fish more moist. Either grilling or baking whole fish is not very hard. The skin is succulent and cooking the fish with the bones will make the meat taste even better. Well cooked fish will fall off the bone and it won’t be a problem.

BIG BERRY experience

During the cooking process, which was performed in the BIG BERRY Kolpa deck, BB guests and team were enjoying nature while drinking Lamut juice and Malnaric Wine.

Rihard also performed one of the funniest “Trying the Cook” games.

LeGhee was the first product guessed by him. The second, which made people around and even Rihard laugh, was Lamut juice produced by his company: “Humm…it feels familiar”, he said. After, he added: “it is juice made with all the variety of oranges that grow in Bela Krajina. It is Lamut and it is the best”. Vizir beer was the last product to be tried, and he definitely recognized it as well.


We definitely can’t wait to try out his trout again!
